this is one of my favorite meals to make. With a bit of olive oil, saute chopped onions and minced garlic in a saucepan. Add a can of diced tomatoes and fresh mushrooms to the same saucepan. When the onions are the texture you want, add cooked penne noodles and start to wilt a few handfuls of spinach. Transfer to a bowl and add fresh basil and feta cheese. Mmm.
